4 eggplants cut in half and
sliced
·
3 tablespoons oil
·
3 tablespoons garlic powder
·
1 tablespoon red pepper
flakes
·
1 teaspoon corn flour
·
5 teaspoons sugar
·
1 cup water
·
3 – 4 tablespoons soy sauce
Heat the oil in a skillet. Add eggplants and cook for 4-5 minutes
stirring occasionally. Stir in water, garlic powder and red pepper flakes. Cover
and simmer until all the water is absorbed.
Mix sugar, corn flour, soy sauce in a bowl until sugar and corn
flour have dissolved. Stir the sauce into the egg plant, making sure to evenly
coat the eggplant. Cook until the sauce has thickened.
*You may add grated carrot and green pepper for color if you like. I enjoyed my eggplants with flat bread and a salad.
This sounds so good. I really like trying new things so I cannot wait to try this myself!
